Stir-fried Pasta Salad

Have you ever wondered Pasta can be prepared as salads? Yes, pasta is considered as quick breakfast or snack preparation besides chowmein or Maggi noodles. This Pasta Salad is based on the very basic Indian method of preparation. I’ve used the penne pasta for this recipe, however, it can also be replaced with the shell-shaped pasta or the tube-shaped pasta for that matter. The whole idea is to use the easily boiled soft pasta for this recipe, as this Pasta Salad is getting just stir-fried and it takes a very little time for the preparation.

Stir-fried Pasta Salad is basically a super simple home-cooked meal for your family with the flavors of Italy along with the touch of Indian cuisine. This recipe is quick, easy and preferably prepared when you need something to eat and you have very less time for cooking. I often look for quick and easy recipes for an immediate tummy filling option. I've used some cherry tomatoes those are grown in my little garden, it gives a colourful treat to the eyes as well. Also, these recipes actually impress and attract the family and friends, because I usually prefer to cook varieties of dishes and they love eating them too. This recipe is a great colourful idea for the guests arriving surprisingly at your home.

These freshly grown cherry tomatoes from our home garden is always a great satisfaction when I consider the phrase of 'you reap what you sow' and the result you get is very fruitful. I have always enjoyed growing small plants whether flowers or vegetables in my own little garden. I love to see them growing and then when they bear fruits the plants look amazingly colourful and beautiful. You can also grow your own very little garden of vegetables such as green chilli, Brinjal (eggplant), tomato, coriander etc.in your kitchen window shelves or balcony. These plants do not need any pesticides or extra care, you just need to water them in sprinkles in the morning and in the evening.
Stir-fried Pasta Salad consists of very simple ingredients and it is a perfect way to fulfill your savory and enjoy your busy day. The recipe instructions are given below.

Serves: 2
Measuring Items: 1 cup=150 ml, Tablespoon

Ingredients:
  1. Penne Pasta- 2 cups (or any pasta of your choice)
  2. Onion- 2 (big ones)
  3. Green Chili- 4
  4. Cherry Tomatoes- 8
Spices:
  1. Refined or vegetable oil- ½ cup
  2. Tomato ketchup- 4 tbsp
  3. Soya sauce- 1 tbsp
  4. Sugar- 1 tbsp
  5. Red mirchi powder- ½ tbsp
  6. Salt as per taste
Method:
  1. Boil water in a pan put the penne Pasta along with a pinch of salt and a drop of oil in it. Boil for 10 minutes or until the pasta turn soft.
  2. Drain the water from pasta completely and keep aside.
  3. Heat oil in the non-stick pan, now add to it sliced onion, chopped green chili and the cherry tomatoes chopped into halves.
  4. Now add salt, sugar and a pinch of red mirchi powder into the pan. The vegetables are sautéed for two minutes.
  5. Add the boiled pasta, along with tomato ketchup and soya sauce. Mix them well. Toss and stir for another two minutes and it's done.
