Egg Noodles
Noodles recipes are very popular and mainly the most important staple food
over all parts of the world. Noodles recipes are mainly a recognizable cuisine from the Asian countries. The
basic recipe preparation is similar to the standard of boiling the noodles and stir-frying the vegetables alongside by adding
to the varieties of sauces that is been used in different recipes. The noodles
preparation is considered to be one of the simplest recipes among the most
infamous cuisines of all times. The Chinese noodle recipes are the most famous
ones which also include varieties in it such as the Hakka noodles, egg-chowmien
noodles, fried noodles etc.
I have always liked the Chinese cuisine and any time given a choice be it for lunch or dinner, I would always prefer to eat Chinese over any other traditional or Indian foods or whatsoever. Also, since I'm from Kolkata, I find it is very famous for the street foods and noodles as the most popular among all, it has always attracted people all over the country too. I just love to taste the variations usually these street vendors offer in every corner of the city.
At home, we normally don’t miss
out to prepare chowmein noodles during
the weekends. As the preparation does not
require much of hard work and also it is
the most craving food in the family. We normally buy the master pack of the
noodles for our monthly food bazaar and store the packet on the kitchen shelf to use it whenever the appetizer craves for. For this noodles recipe I have mainly used eggs and peas, keeping the
other ingredients intact as usual, however,
you can also add or replace any vegetables of your choice to make it more colorful and nutritious. I've used Frozen peas for this recipe, but fresh peas can also be used in it, just that you don't have to boil the fresh peas and put them along with the other veggies and stir fry. I have not added
vinegar and chili sauce because this
recipe is very much recommendable for the children, so I did not want to make it spicy and chemically bound, instead,
it has been prepared keeping in mind the health benefits of the children and also for
the grownups.

Ingredients:
- Noodles- 2 bunch
- Peas- ½ cup
- Eggs- 4
- Onion- 1 large sized
- Green chili- 4
- Potato- 1
- Refined oil- 1 cup
- Red Mirchi powder- 1 Tsp
- Tomato ketchup- 3 Tsp
- Soya sauce- 1 Tsp
- Salt (as per the taste)
- Sugar- ½ tsp (just a pinch)
How to prepare Egg-Peas Noodles with step by step pictures and instructions:
- Take a cooking wok, boil 3 cups of water. Wash 2 eggs and add them in boiling water.
- After 2 minutes, add the noodles in boiling water and also the frozen peas in it. Boil for 5 more minutes and then put off the flame.
- Keep the boiled eggs separately. Drain the noodles and peas in a strainer, and then rinse with cold water.
- Sprinkle 2 tsp of oil in the noodles and toss gently. Keep the noodles spreading it thoroughly, so that moisture would escape and noodles wouldn’t get sticky.
- Now take a pan, put 1 tsp of oil into it. Beat 2 eggs with a pinch of salt and fry them in the pan.
- In the same pan, add the remaining oil. Once the oil is hot enough, start adding sliced onions, chopped green chili, and sliced potatoes. Fry them for 2 minutes.
- Now add red Mirchi powder, salt, and the boiled noodles and peas. Gently mix them well. (always remember to keep the gas flame from high to medium, so that the noodles don’t get burnt)
- Additionally, to it add tomato ketchup and soya sauce, toss all together.
- Finally, add the fried eggs and add a little sugar for a flavor. Keep tossing them gently with a cooking spud for 2 more minutes.
- Now switch the flame off. Crack those boiled eggs and cut into pieces to furthermore garnish them along with the noodles. (or you can just slice the egg into a half)
