Chole Fried Rice

Here's presenting you the first recipe for this new year on the blog. It is just like a dream how the previous year got over so quickly, and we are on the second day of the new year. On that note, I'm presenting to you one of a very unique recipe from my mom's cookbook, which she often prepared during the winters when we had plenty of vegetables available in the market. Although the recipe is quite synonymical to those of Kabuli Chana Pulao/Chole Pulao, however, my mom had her way of giving it quick and easy cooking steps.

Today's dish is a delicious fusion with the combination of rice, chickpeas along with colourful vegetables and of course other spices. It is a great, hearty, less spicy and oily wholesome healthy meal. Chole Fried Rice is what the dish named as it includes these three main things necessary for the recipe. As I mentioned Chole Fried Rice is quite similar to the chole pulao which is normally prepared with basmati rice and ghee, basmati rice is a good ingredient to give a flavorsome aroma to the dish, however, we use the normal regular rice as these sort of fried rice are usually prepared on our day to day basis. I've also skipped using ghee (clarified butter) for this recipe keeping the dish a low-fat content and also good for cholesterol control.

Chole Fried Rice is a delicious and healthy variation for vegetable pulao/ fried rice. It is also time-saving, as it cooks faster than pulao. You can use basmati rice or ghee for this recipe and also it can be cooked with leftover rice keeping all other ingredients similar and giving it a stir fry in a pan, just as in a good way to finish the leftover rice, it can be another delicious meal to finish in less time.  I make this easy Chole Fried Rice when I have really short of time. This recipe also happens to be our personal favourite for the season, as different vegetables along the chole give a really nice aroma lingering around the room when the pressure releases from the cooker, as I cook them in a pressure cooker to save my time.

Chole Fried Rice

Measuring Items: 1 cup=150 ml; Teaspoon (tsp)

Ingredients:
  1. Rice- 2 cups
  2. Kabuli Chana (white chickpeas)- 1.5 cup
  3. Carrot- 2
  4. French beans- 100 grams
  5. Tomato- 2
  6. Onion- 2
  7. Green chili- 5 or 6
  8. Ginger- half an inch
  9. Garlic- 10 cloves
Spices:
  1. Salt- to taste
  2. Sugar- 1 tsp
  3. Refined oil- half a cup
  4. Cloves(lavang)- 4
  5. Cardamon (elaichi)- 2
Method:
How to prepare ‘Chole Fried Rice’ with step by step pictures and instructions-
  1. Soak the chole in water for overnight or at least 4 hours. 
  2. Chop the vegetables in the desired shape.
  3. Heat a pressure cooker, add oil and sugar.
  4. Once sugar starts leaving fumes, add lavang and elaichi to it.
  5. Add the sliced onions, green chilies, minced ginger, and garlic. Saute and fry them.
  6. Next, add all the chopped vegetables and chole one after the other.
  7. Add salt and mix everything well. Saute the veggies for about two minutes.
  8. Now add rice and mix.
  9. Pour a consistent amount of water, just touching the top level of rice and veggies.
  10. Cover the lid of the cooker, and let it whistle out (3 to 4 whistles sufficient enough to cook well, however it may vary depending on the pressure cooker)
  11. Now switch off the gas flame and leave the cooker with its lid closed as it is for about 10 to 15 minutes.
  12. Finally, remove the pressure of the cooker, give a light stir to the cooked rice and serve hot.
Tips: Soak the chana overnight so that they turn soft when they are cooked. Also, soak rice for about 30 minutes before cooking. Water consistency in the ratio of 2:4, that is for 2 cups rice add 4 cups water.
