Chatpata Aloo is one of the favorite snackers in the Indian cuisine. Potato recipes are famous all over the world, and this one is prepared in different methods in different parts of India. Chatpata Aloo is basically a stir-fried potato, coated with just a few common regular spices. It is mostly served as snack or side dish with meals, preferably during lunch as its tangy taste will add a benefit to your bright sunny afternoon. Essentially, this Chatpata Aloo recipe is a vegetarian option and it is most often prepared at my home during weekdays when I have very less time to manage cooking along with my work.

Chatpata Aloo goes well with hot steamed rice or chapattis (Indian flatbread), or it is ideal to eat just as a starter or even when you feel like eating or munching anything, this is the best option for an evening snack too. For this recipe I have used the baby potatoes, however, it can also be prepared with the regular potatoes that are available to you. Here goes the quick recipe for all the potato lovers. It is very simple and easy to prepare. You can combine it with rice or chapatti or can even have it just like that. Check out the recipe, try it yourself and help me with your feedback.

Ingredients:
  1. Baby Potato- 300 grams
  2. Onion- 2
  3. Ginger- ½ inch
  4. Garlic- 4 cloves
  5. Tomato- 2
  6. Coriander leaves and scallion
Spices:
  1. Bay leaf- 1
  2. Cinnamon- 1 stick
  3. Clove- 4 pieces
  4. Garam masala- 1 tsp
  5. Turmeric powder- ½ tsp
  6. Chilli powder- ½ tsp
  7. Cumin powder- ½ tsp
  8. Coriander powder- ½ tsp
  9. Salt (according to taste)
  10. Sugar- 1 tsp
  11. Mustard oil- (as much required)
Method:
  1. Pressure cook baby potatoes (2-3 whistles or for 10-15 mins until the potatoes boil). Cool and peel them. (You can also cook them along with the potato skin if you get the tender baby potatoes because even potato skin has its own benefit)
  2. Blend onion, ginger, garlic, tomatoes, clove, cinnamon in a mixer grinder all at once.
  3. Heat oil in a pan. Fry baby potatoes till golden brown. Keep it aside.
  4. In the same pan, put bay leaf, blended paste (fry for 2 mins).
  5. Add the remaining spices now and the boiled potatoes. Coat them well.
  6. Garnish with scallion and coriander leaves.
