Desi Chinese Fried Rice
Fried rice recipe with only
vegetables is an adapted version of Chinese fried rice recipe. The vegetable
fried rice recipes version is a very popular combo from the Indo-Chinese
recipes. It has also been transformed into a popular street food in India and
also it has been presented in different ways by many fine dining restaurants as
well.
Basically, fried rice is a
Chinese cuisine recipe, however, it has been adapted in the Indian cuisine with
its Indian taste and also the ingredients and spices too. Not to forget
mentioning here that the fried rice was possibly originated in the streets of
Kolkata.
I usually prepare this version
of the fried rice and egg fried rice is my husband’s favorite, which I quite
often prepare in my kitchen to pack for his office lunch. Normally it is a very
quick recipe that I usually prepare with the left over boiled rice. However, if
you are to prepare the fried rice then and there after cooking the rice, then
note here that you need to spread the rice in a large vessel to cool it down
properly, as using hot steamed rice would end up with sticky and mushy fried rice.

Measuring Items: 1 cup=150 ml, Teaspoon
Ingredients:
- Rice- 1 cup
- Spring onion- 4 stalks
- Cauliflower florets- 1 cup
- French Beans- 1 cup
- Red Carrot- 2 (or can even use the regular ones available)
- Capsicum- 2
- Peas- ½ cup
- Cabbage- 1 cup (optional)
- Vegetable oil- 1 cup
- Sugar- 2 tsp
- Salt- as per taste
- Turmeric powder- a pinch
- Mirchi powder- 1 tsp
- Soya sauce- 2 tsp
- Tomato sauce- ½ cup
- Wash the rice and soak it for at least 30 mins. (You can use either Basmati rice or the simple one)
- Boil the rice, drain the water properly and keep it to cool down.
- Take a pan, heat oil in the pan. Put sugar in the warm oil to bring the texture for the recipe.
- Use 2 chopped spring onion in the beginning. Add them into the hot oil. Now one by one add all the vegetables finely chopped. Sauté for 5 mins.
- Add all the spices and cook for another 5 mins.
- Now add the boiled rice. Mix them well along with all the vegetables.
- Finally add the chopped spring onions (the other two which were left)

Heyy, this was very fun to read. When talking about chinese food i always think of Mamalan London, they are the best Chinese restaurant in Brixton and their sesame halloumi wrap is the best vegan snack i ever had.
