इंसान,
जब अजनबी होते हैं,

इश्क़ में आसमान पर हम उड़ने लगे थे,

Dal Paratha

Dal Paratha is one of a type of Indian flatbread stuffed with boiled lentils and fried with oil or ghee. It is basically a sweet flatbread, which is very similar in preparation to the Puran Poli Recipe, which is a traditional Maharashtrian style savoury prepared on almost all occasions in India. Dal Paratha made mainly for breakfast in Indian homes, especially Punjabi's have many version of paratha preparation for breakfast, lunch or even dinner. We Bengali's prepare parathas in a very simple method, without the stuffing portion, however, with the fusion in every Indian cuisine we tend to prepare varieties of Indian flatbread in different ways of preparation.

I have already shared Aloo Paratha in my previous post on the blog, where I've used 'Aloo' that is potato as the main ingredient for the stuffing in the paratha, whereas the overall combination of wheat flour and other spices is almost similar. The stuffed Dal paratha’s outer layer is made of whole-wheat flour which is rich in fiber, while the filling is made from protein-rich lentil and spices. For this dal paratha recipe, I've used split red lentils, that is the Masoor Dal, as it is the most available lentil in my kitchen every time I go for any Dal prep, and also it is cooked in very lesser time as compared to the other dals. Masoor dal is a one of the delicious, easy to cook lentils of all times.

This Dal Paratha is the best way to pack a tiffin box and also an energizing stomach filling breakfast option. Dal Paratha is served piping hot with a dollop of ghee on it in the lunch or dinner can help you a win-win delicacy, as it is healthy, tasty, satiating to the appetite and a quick way to finish your cooking. I normally prepare any stuffed paratha on my weekends, for a quick brunch option, that is served with either plain yogurt or pickle.

Dal Paratha

Measuring Items: 1 cup=150 ml; Teaspoon (tsp)

Tips:
Boil the lentils in a pressure cooker, and mash it well along with jaggery while cooking.
For the dough, you can use half all purpose flour and half whole wheat flour too.
Ingredients:
  1. Wheat flour- 4 cups
  2. Split Red Lentils- 2 cups
  3. Coconut (grated)- 1.5 cup
  4. Ghee (clarified butter)- 4 tsp
  5. Sugar- half a cup
  6. Jaggery (Gur) - 1 cup
  7. Salt- a pinch (otherwise)
  8. Jeera (cumin) powder- 2 tsp
  9. Turmeric powder- 1 tsp
  10. Refined oil- half a cup (optional)
Method:
How to prepare ‘Dal Paratha’ with step by step pictures and instructions-
  1. Wash the masoor dals and soak in enough water for at least 30 minutes.
  2. Drain the water and add the dal in a pressure cooker along with 4 cups of water. Cook on high heat for two whistles.
  3. Remove the pressure cooker from heat and let the pressure release. Open the lid of the cooker.
  4. Now add jaggery, coconut, salt, cumin powder, a teaspoon of ghee, turmeric powder and cook on a low flame for 5 minutes.
  5. Simmer until the lentils soak water and make it a batter like so that it can be used to make the filling of Paratha.
  6. Take a large mixing bowl, add wheat flour, sugar, salt for taste, ghee and mix well. Knead dough to a soft consistency just like the chapati dough.
  7. The amount of filling should be equal such that to the consistency of the amount of dough.
  8. Roll the parathas with the filling inside, and fry them on hot tawa/frying pan with oil/ ghee applied on it.

Chicken Do Pyaza

Chicken Do Pyaza is one of the very popular recipes from the Indian Mughlai cuisine. It is also very popularly known as Murgh Do Pyaaza. 'Do Pyaza' generally refers to two types of onions in one recipe, i.e., one as a sliced and the other may be either as a whole onion or its blended paste. Chicken do Pyaza is very famous among the Muslims, even the Bengali's prepare it very often. Even the Punjabis have a different way of preparing this delicacy, as a fusion to all the chicken recipes, Chicken do Pyaza comes along as the easiest recipe of all.

Chicken do Pyaza is much like the other chicken recipes that are usually prepared at home, however keeping the number of onions double the amount as compared to the other chicken recipes. As the name clearly says, 'Chicken do Pyaza' which means double the onion (do=double, pyaza= onion). In this recipe the two types of onion that I've used are one is finely chopped and the other is blended, along with other basic spices. Chicken do Pyaza is a delicious savory best combined with rotis, bread or naan, etc. It tastes a little bit of sweet because of the plenty of onions added in it, and also has a mild spiciness to the gravy, hence giving it a perfect match to enjoy the meal. Chicken Do Pyaza

Tips: Marinade the chicken with blended onion paste to give the dish more flavoursome aroma.

Ingredients:
  1. Chicken- 500 grams
  2. Onion- 10
  3. Tomato- 4 (large sized)
  4. Green chili- 6
  5. Ginger- an inch
  6. Garlic- 1 whole
  7. Coriander leaves
Spices:
  1. Turmeric powder- 2 tsp
  2. Red mirchi powder- 3 tsp
  3. Salt- to taste
  4. Mustard oil- 1 cup
Method:
How to prepare ‘Chicken do Pyaza’ with step by step pictures and instructions-
  1. Marinade the chicken pieces with turmeric powder, red mirchi powder, mustard oil, salt, and onion paste, for at least 30 minutes.
  2. Finely chop the required vegetables and keep it aside.
  3. Heat a kadhai with oil in it, add the sliced onions, green chilies. fry until onions turn golden brown in color.
  4. Now add the ginger-garlic paste, tomatoes, turmeric powder, mirchi powder and salt. Keep sauteing until tomatoes leave oil by the sides.
  5. Now add the marinated chicken, mix well. Cover the kadhai with lid and cook the chicken until they are soft. (Keep stirring occasionally, sprinkle a little bit of water in between if needed)
  6. Once chicken leaves oil by the sides, pour a cup of water and bring to a boil.
  7. Cook for about 10 minutes more and its done. Finally, garnish with coriander leaves.
You can either or not use boneless chicken for this recipe, however, I preferred using the bony ones because they taste much better when it comes to making a curry or gravy. This Chicken does Pyaza is one of the most loved recipes at my home, as it requires very less time for arranging the things and also best dish when it comes for heavy meals. The Little Butterfly

('The Little Butterfly' is an adaptation to a Hindi short story 'Chhoti Titli' written by Dr.Suresh Panth. It is a story about a butterfly who wanders around in a lonely garden wanting to be playful and looking for a friend)

Once there lived a lovely little butterfly in a lush green flower garden. She used to flutter from one flower to another throughout the day. Sometimes lived on one flower and then sometimes she danced on another flower. The little butterfly lived alone in the entire garden, it used to run around here, there and everywhere. She was never ever tired.

Its feathers were coloured with red-yellow feathers that seemed even more beautiful on that little butterfly. There were also many colours on its wings. Whenever she takes rest on the flowers, the colour of her feathers would settle with the colour of the flowers. She had two antennae on her head, which was the medium to her touch sensation through which she could always feel the things in and around her.

The butterfly liked the garden very much, as it was her home and all the pod-plants were believed to be her room. The small butterfly kept flying and flying like a plane, when tired she would sit down on the flower bed. She used to fly upon every single flower in the garden and suck the juice from the flower to fill her appetite and thirst. The butterfly lived alone in the entire garden like a queen, and she never had any shortage of food. But she sometimes wished for a friend, who could play with her in the garden.

Then one fine day, just before the twilight, the butterfly was sitting on a rose flower, there came a small bumblebee. Bumblebee came and sat on the same rose flower. The butterfly took herself a little away on the flower and gave some space to the bumblebee. The lovely butterfly thought that the little bumblebee is the guest of that garden, he can sit anywhere and enjoy the juice of the flowers.

But the bumblebee did not like the butterfly sitting beside him, so he said, "You fly away from here, this flower is mine".

The butterfly did not like when she heard the bumblebee dismantling her that way and she said, "No, this flower is mine too, why should I fly?"

The bumblebee said, "I love this rose flower and I want to enjoy the juice. You go and relax in any other flower. "

Butterfly said, "This is my garden, I can sit on any flower and you are just a guest."

The small bumblebee was in a hurry to fly back home and he did not say anything. He started sucking juices from the rose flower quickly so that before it gets dark he would return to his nest. But suddenly he was trapped in the pollen of the flower. The bumblebee tried to stretch his nose for a while, but he was stuck with the flower pollen badly, and he started having pain.

What does the bumblebee do now? He started fluttering. Butterfly saw him in pain and felt pity for him. The butterfly dug its antenna at the place of the flower where the bumblebee's nose was stuck. Then she said to pull the bumblebee's nose slowly. The bumblebee did just as the Butterfly said to him. And then he came out from the pollen of the flower. He was relieved from the pain and thanked the butterfly.

Since that day the bumblebee became a friend and kept coming again to the garden to meet the sweet butterfly and also to enjoy the juice from any flower. He also huddled in the entire garden throughout the day with the little butterfly.

Moral: A friend is very important in life even if you've everything.

Beimani Ka Fal

बेईमानी का फल | Fruit of dishonesty

(यह कहानी एक गरीब दुग्धजनक के बारे में है, जो अनुचित और बेईमान साधनों से समृद्ध होकर अमीर बन जाता है। उसे एक सबक मिलता है जिसके माध्यम से उसने सीखा कि 'ईमानदारी ही सर्वोत्तम नीति होती है')।

एक दूर गांव में, एक दुग्ध बेचने वाला आदमी रहता था। वह दूधिया बहुत गरीब था। उसके आय का एकमात्र साधन उसके दो गायों से एकत्रित हुए दूध बेचकर मिलता  था। हालांकि, वह कमाई छह सदस्यीय के परिवार के लिए पर्याप्त नहीं था। वह अकेला ही एक कमाने वाला व्यक्ति था जो अपने परिवार का पालन पोषण करता था। उसके परिवार में पत्नी, वृद्ध माता-पिता और दो युवा बेटियां शामिल थीं।

दुग्धशाला में दो बड़े डिब्बे होते थे जिसमें छह लीटर दूध रख सकते थे। हालांकि, वह गाय केवल तीन लीटर दूध दे सकते थे, जिसे वह बेच सकता था। उसे हर दिन दूध बेचने के लिए एक नदी पार करके दुसरे शहर में जाना पड़ता था।

एक दिन, नदी पार करते समय दूधवाले के दिमाग में एक योजना आई जिससे वह अपनी कमाई को दोगुना कर सके। उसने दूध के डिब्बे में कुछ पानी मिलाया और बेचने के लिए चला गया। वह खुश था क्योंकि वह पानी के साथ मिश्रित दूध को अतिरिक्त लीटर के दाम में बेचकर अतिरिक्त राशि कमाने में सक्षम था। इस तरह, नदी पार करते समय हर दिन, दूधवाले ने दोनों डिब्बे में पानी मिलाकर बेचता रहा।

इस प्रकार, तीन लीटर दूध कमाने के बजाय, अब दूधिया दोनों डिब्बे में छह लीटर दूध प्रत्येक के लिए कमाता गया। उसने दूध में पानी मिलाने का प्रक्रिया जारी रखा और फिर अपने ग्राहकों को बेचता रहा।

दूधवाला बेईमानी का माध्यम अपनाकर बहुत अमीर बन गया। वह उस शहर तक पहुंचने के लिए प्रतिदिन नदी पार करता जहां उसके ग्राहक रहते थे। उसने नदी के पानी को उदारता से उस दूध के साथ मिश्रित किया जिसे उसने अच्छे लाभ में बेचता गया।

बहुत जल्द वह अपनी बेटियों में से एक की शादी करना चाहता था। इसलिए, एक दिन वह अपनी बेटी की शादी का जश्न मनाने के लिए बकाया राशि इकट्ठा करने के लिए चला गया। इस प्रकार एकत्रित बड़ी राशि के साथ उसने शहर से बहुत सारे कपड़े और सोने के गहने खरीदे।

दूधवाला सब कुछ खरीदकर उत्साह के साथ अपने गांव में वापस जाने के लिए नदी को पार करने लगा। लेकिन नदी पार करते समय उसकी नाव हिलते डुलते हुए उलट गई। और दुर्भाग्यवश नदी में उसकी सभी महंगी खरीदाई डूब गईं। दूधवाला बहुत दुखी हुआ और रोता रहा। जब वह रो रहा था, तब नदी के पानी को देख रहा था, उसी समय नदी से एक आवाज सुनाई दिया। आवाज़ ने कहा, "यह रोने का कोई उपयोग नहीं है क्योंकि जो आपने खो दिया है वह केवल उन गैरकानूनी लाभ का ही भोग है जिन्हें आपने अपने ग्राहकों को बेवकूफ बनाकर अर्जित किया है।"

दुग्धजनक ने अपनी गलती को समझ लिया और उसे अपनी गलती के लिए बहुत खेद था। उसने नदी से क्या लिया था, नदी ने अंततः उससे वापस ले लिया।

नैतिक: "बेईमानी हमेशा विफल होता है। आप बेईमानी से कुछ हासिल नहीं कर सकते।"
